Title: BBQ
Post by: Jeffer on May 01, 2005, 09:19:49 AM
I've been a trouble magnet all week.  I'm finally off today, going to smoke a turkey and have a few friends over for cocktails. ;D

With my luck this week, I'll burn down the back yard.  :-[

Good luck with 312.

I have one of those giant drum smoker / grillers.  My wife calls it the Grill B****ard. ;D

I've done them before on it.  About 7 hours at 225-250 and we should be ready.

Ribs are next week. I'll toss a couple extra racks on for you.  8)

They were supposed to be this week, but my freezer conked out and I was able to move everything but the Turkey.  So Turkey it is...

Normally Hickory for turkey.  They're so big, I need strong smoke to get at them.  But I've come to prefer apple for ribs.  Mesquite for steaks and seafood.  I've been playing with pecan and those Jack Daniels chips.  They're from the barrels, and when you open the bag it's like opening a bottle of Jack.  They're fun, but I haven't figured out quite to do with them..

Do you get the idea I grill a lot??   ???

If you like ribs .. I highly recommend the BBQ pork ribs from M&M meat shops. (may be a Canadian store only .. I'm not sure)

Lottso is next.

I'd like to do the BBQ vacation sometime. Hit the Carolinas, Memphis, KC and Texas. I'm sure I probably left out a few spots. ;)

Yes good job Homer.  I had to take a break after 2 badges of Harvest, I just couldn't take it anymore.  I'll have to use RR when I get back to it...

Here's another good site for ribs.  If you've ever been to Memphis, Corky's is an institution.

Hmm.. Maybe they could change Harvest for carnivores.  Match up the steaks, chops etc....   ???

That's not a bad price. Locally I pay $20-$25/rack for cooked ribs. Corky's is pretty well known. ;)

Corky's has very good ribs.  I lived in Memphis for two years, and while I found better, they were little hole in the wall places that obviously don't ship.  Memphis BBQ is pretty tart and spicy.  If you like that kind, you'll love Corky's, if you don't you won't....

I have friends that still ship me Corky's rub and sauce once a year.  I sweeten half the batch up with some brown sugar when I am having company.

That's so funny.  I was thinking about beer can chicken just now...

It makes great chicken, and of course you must use a half empty can of beer...  Makes for really fun prep work. ;)

The best part is drinking the beer out of the can.  :P

i been in memphis most of my life and CORKY'S RIBS ARE NOT THE BEST..........
if you have been to memphis in may you would know who makes the best ribs in memphis........

The last thing I want to do is get into an argument with someone in Memphis about BBQ... lol...

I agree there is much better BBQ than Corky's.  But it is pretty good and they DO ship...

I went to Memphis in May on a couple of occasions.  I was fortunate enough to be able to hang out at one of the major rigs  A couple of seconds for whole hog and a variety of othe prizes...
Of course the answer to "who has the best ribs in memphis" is
"Insert the name of your BBQ team here!".   ;)
