This is one of my most favorite recipes ever...I make it for every function I have to attend, its super easy and everyone loves it!
Foxx's Cheesy Potatoes
1 bag of Orieda Potatoes O'Brien
16 oz. Sour Cream
2 cups shredded cheddar cheese
1 can cream of chicken soup (sometimes I use cream of onion...depends on how savory you like things)
1 stick of butter
Preheat oven to 350.
Empty the bag of potatoes into a 13x9 cake pan...spread them evenly over the bottom of the pan.
Stir together the soup, sour cream and shredded cheese.
Carefully spread this mixture over the potatoes.
Melt the stick of butter and pour it over the top of everything (it should float on top of the sour cream mixture).
Bake for 1 hour.
Enjoy! O0

Different Potato Salad
5-6 large russet potatoes
sour cream (small container)
mayonnaise
chopped green onions
garlic powder
pepper
shredded cheddar cheese
Boil potatoes in salty water till fork tender, drain.
Stir in the following gently to avoid mashing up potatoes too much:
Chopped green onion, sour cream, mayonnaise (about half and half but add a little at a time to avoid getting dish too soupy)
Season with garlic powder, pepper, salt
Top with shredded cheese
Always a hit at get-togethers
(Best served warm)

I don't remember seeing a Orieda O'Brien bag of potatoes, is this a special cut potato, if so what does it look like,...for example waffle or crinkle?
I use the shredded hash brown potatoes.....usually just the Wal-Mart Brand

They are "homefries" (little diced potatoes) with peppers and onions....Red bag, next to the rest of the Orieda french fries...

I have totally been a slacker...promised yummy potato recipes and then never held up my end of the bargain...
Here you go...I originally used this one as a side dish for dinner, then realized that, like most yummy potatoes, it goes very well with breakfast...Enjoy!
Cottage Potatoes
10-12 potatoes (small to medium sized...works well with Yukon Gold or Red)
1 green pepper, chopped
1 med. onion, chopped
1/2 lb. Velveeta Cheese, cubed
2 cups Cheese and Garlic (or cheese and onion) croutons
1/2 lb. butter (yeah, that is right!)
1/2 cup milk
Cook potatoes; cool, peel and cube.
In a large bowl, mix potatoes, onion, green pepper, cheese and croutons. Season to taste with salt/pepper.
Put mixture in 9x13" pan. If making the night before, stop here.
Pour 1/2 lb. melted butter over mixture, then 1/2 cup milk.
Bake at 350 for 35-40 minutes.
*notes: yeah, that's a lot of butter. You can just use one stick, but its less delicious.
Pepperidge Farms croutons work the best...they are a bigger sized than most...

I had to do half without sourcream and half with since my husband doesn't like sour cream. I have to say that it was delicious my husband and I both enjoyed it. I was happy that I actually fixed something that required more than a cup of water. Thanks for the recipe!

Here's a good potato soup.
3 Yukon Gold potatoes, about 1 pound, peeled and cut into 1-inch dice
3-4 thick leeks, white and light green parts only, cleaned and sliced thin
1 quart water
1 bay leaf
3 sprigs of thyme, tied together
2 teaspoons salt
1/2 teaspoon pepper
1 bunch chives, sliced thin, about 1/2 cup
Place all ingredients except chives into medium saucepan and bring to a simmer. Cook for 20-30 minutes or until potatoes can be easily smashed against side of pot with wooden spoon. Remove thyme and bay leaf, and puree with immersion blender until very smooth. Serve in bowls with chives sprinkled on top.

Sticks to your Ribs Potato Soup
10-12 Yukon Gold Potatoes, peeled and cubed (don't cut them too small...they will disintegrate)
1 big can Chicken Broth (I cant remember the oz. amount...but its the big can size like what Juicy Juice comes in...lol)
2 cups water
3 stalks of celery, diced
3 carrots, peeled and diced
1 medium onion
1 stick of butter
1 quart heavy whipping cream
2 cups milk
6 slices of bacon, fried crispy and crumbled
In a large stock pot, over medium heat, melt the butter...add the onion, celery and carrots. Cook until onion is clear.
Add Chicken broth and water; bring to a gentle boil...add potatoes.
(The broth and water should cover the potatoes...add more if necessary.)
Continue to simmer, over medium heat for 10 minutes.
Reduce heat to low, add whipping cream and milk. Season to taste. (I usually only add freshly ground black pepper.)
Simmer for at least 30 minutes, or until potatoes and carrots are soft ( At this point, you can continue to let it cook over the lowest heat setting for up to an hour...flavor builds the more you cook it...)
During the cooking time, about 15 minutes before you are going to serve the soup, add the bacon.
Enjoy! You can top it with some shredded cheddar and sour cream if you like...
