Post by: Tamara on July 02, 2006, 05:29:28 AM
1 pkg. (12 oz.) semisweet chocolate chips
2 cans (14 oz. each) sweetened condensed milk
3 cups white chocolate chips
1 tsp. peppermint extract
1/8 tsp. salt

~Line an 8" square pan with enough foil to overhang side by 2"; coat with cooking spray. In microwave-safe bowl, combine semisweet chocolate chips and 1 can milk; microwave on High in 20-second intervals, stirring, until smooth; spread in pan.

~In clean bowl, combine white chocolate chips, the extract, salt and remaining milk; microwave on High in 20-second intervals, stirring, until smooth. Gently spread over semisweet layer.

Refrigerate overnight. Then cut into small squares.

If you want to make this fudge for Christmas, crush 1/4 cup candy canes and sprinkle on top and then gently press - then refrigerate overnight. This is really yummy.
