Title: Easter Recipe

Horseradish and beet relish.
Some people get all fancy adding sugar and vinegar to theirs...we just do this:

~ 1 can whole beets (grated or put in food processor)
~Fresh grated horseradish (you think chopping onions is bad, nothing compared to this) or as much horseradish from a jar as you like (depends on how hot you like your relish)

Just mix it up. Add salt if you like. Serve with ham or on ham sandwich. I don't eat mine on the ham. I like my hard boiled eggs smothered in the stuff.

My grandmother used to hand grate the fresh horseradish root. We would all vacate the kitchen and it was so strong it would go into other parts of the house. Even with windows and doors open. If you can grate fresh horseradish by hand, you can do anything!

Oh I can't wait for easter sunday to eat some relish on my eggs.  !@!

Oh and BTW...the juice from the canned beets can be used to dye eggs. Makes a pretty purple.   ee2.1.gif
