Baked Yellow Eye Beans
(these are really good)
1 lb of yellow eye beans (or other kind works too).
Soak overnight in water with 1/4 cup vinegar.
In morning, bring to a boil ~ drain.
Add same amount of water and vinegar.
Add 1 tsp salt, 1 tsp pepper, 1 chopped onion and some pork scraps.
Boil at medium heat till almost done ~ approximately 3-4 hours.
(Keep close check on liquid because it boils down quickly).
Add 1 tin of tomato soup and 1/2 cup molasses.
Add 1 tsp mustard, salt and pepper to taste.
Add brown sugar to taste ~ about 1/2 cup.
Bake at 375`F for about 2 - 3 hours.
But use your own judgement (all stoves and ovens are different).
I bake mine till they feel soft.
Careful not to overcook though or they could become mushy.
