Got bananas laying round here is an amazing easy cake to use them up!
100 g (4 oz) butter
100 g (4 oz) light soft brown sugar
2 eggs, lightly beaten
225 g (8 oz) plain wholemeal flour
1 1/2 teaspoons baking powder
1 teaspoon grated nutmeg
2 bananas, peeled and chopped
100 g (4 oz) chopped walnuts
soft brown sugar to decorate
1. Line and grease a deep 18 cm (7 in) round cake tin. Cream the butter and sugar until light and fluffy. Gradually beat in the eggs.
2. Fold in flour, baking powder and nutmeg. Carefully fold in the bananas and walnuts.
3. Spoon in tin, bake in a moderate oven for 1 1/4 - 1 1/2 hours or until a skewer inserted into the centre comes out clean.
4. Turn out on to a wire rack, sprinkle the top with soft brown sugar and leave to cool
Oven temperature 180°C, 350°F, gas 4 (enjoy!!!)
