DADS LITTLE REFIGERATOR BLUEBERRY PANCAKES

1 cup blueberries or more if you need them (set aside).

In a medium sized bowl add together these wet ingredients:
1 egg, beaten
1 3/4 cups milk

Sift together these dry ingredients in a smaller bowl:
1 1/2 cups flour
1-2 TBSP sugar
3 tsp baking powder
1/2 tsp salt

Add dry to liquid ingredients. Beat only till combined.
NOTE* If batter thickens, add more milk.

METHOD:

Heat 2 TBSP light olive oil on larger size griddle or fry-pan to 380'F.
(Drops of cold water will dance across it).

In a small bowl stir together:
A small scoop of batter and 1/2 handful of blueberries for each pancake.
Cook till surface is covered with bubbles and edges lose their gloss.
Turn and bake til golden brown.

Cool then wrap in wax or parchment paper and store in container in fridge.

YIELD: Should make about 20 or more pancakes.

For breakfast just pop one in microwave - then top with butter or syrup.
If you like you can serve with an egg, bacon, sausage or whatever.
Great for working couples or when "company's coming!" Yummy Yummy Good!!
