Meat & Five Bean Casserole
1 lb. ground round (or extra lean ground beef)
1/2 lb. bacon, diced
1 lg. onion, diced
1/2 c. brown sugar, packed
2 tsp. dry mustard
1/2 c. bourbon (any well-aged brand will do)
2 (16 oz.) cans pork and beans
1 (16 oz.) can each: chickpeas, kidney beans, butter and lima beans

Fry ground round (beef), bacon and onions. Cook until onions are
translucent, but not browned. Drain grease, leaving about 2-3 teaspoons .
Drain all the beans except pork and beans. Mix all together in casserole and
bake 2 hours at 350 degrees. Serves 10 - 12.

It is important to use good pork and beans. One with a molasses sauce works
really well. Kidney beans can be any kind but butter and lima beans should
be well-seasoned (like Sylvia's). They seem to work best. Of course, you can always use homemade.

Serve this with green salad or coleslaw, potato or macaroni salad, sliced tomatoes and iced tea and you have a great meal.
