I cook mine that way too.  also, when everythings done in the skillet, then I pour my eggs ( have em already in a bowl, beaten & ready to go) over everything & cover with a lid, cook on low til the eggs are done.  Served with biscuits makes em even better, lol.   :D

this has always been one of my fav recipes....how about a dash of crushed red pepper for the brave....just remember the bigger the dash the hotter it will be....lol

Agree with crankycook.... season with salt, pepper, garlic, slice about 1/2 onion, and your favorite hot sauce. Top with shredded cheddar cheese.

Your recipe sounds really good.

Ty for tip foxx,   but hubby won't eat anything that has touched onions or peppers,   and a bag of potatoes is a lot cheaper than the oreida stuff,  LOL.

This is actually one of my favorite breakfast treats...I love all things potato....

I use Orieda's Potatoes O'Brien (with onions and peppers)...seems to give more flavor than "homemade" home fries and is much quicker...

Once the potatoes are done, mix in the cooked eggs and veggies or meat...a little onion salt or seasoned salt depending on your preference...top the whole deal with some shredded Velveeta or cheddar... mmmmmm
