ok lets start over Jim.  Go to the trash, get out the steaks, wash very well, grill until very very dark brown ( kills all germs that the washing didn't get) Now u have dirty jerky.  Paula Deen i'm not  :) but when u camp with hubby and a bunch of kids u will eat almost anything.

Remove steaks from marinade and discard.

Why would we discard the steaks,  they are expensive.

We use this marinade all the time.  It's wonderful and believe it or not no one has ever guessed that the secret ingredient is ground coffee lol.  It gives the steaks a wonderful taste, hamburgers also.

1/4 cup freshly ground coffee, grind very fine
1/4 cup coarsely ground black pepper
2 tablespoons kosher salt
2 tablespoons vegetable oil
2 tablespoons brown sugar
4 steaks ( I use ribeye steaks)

Combine coffee, pepper, salt, oil and sugar in a jar with a tight-fitting lid and shake well. Pour over steaks and allow to marinate at least 2 hours in the refrigerator.  Remove steaks from marinade and discard.  Grill to desired doneness.

No one will ever guess that the secret ingredient is ground coffee.
I use this on camping trips and mix all ingredients in a ziploc bag and add the oil when i'm ready to use the marinade.
We also use the dry ingredients to sprinkle on hamburgers before grilling.
