I couldn't believe it when I found this recipe - how easy is 3 ingredients?! They are pretty rich and peanut buttery.

  I also make these for hubby who is diabetic....I use the Baking Splenda instead of sugar and also use 1 tsp vanilla...they are the best!

I made these a little over a week ago,  they are very good,  and very easy.   I actually doubled the recipe.   They taste great,  my kids love them.   I still got a few in my cookie jar.  My hubby likes it if you put a hershey kiss on top of them,   of course unwrapping all those kisses is a pain.

Easy Peanut Butter Cookies

This is the best peanut butter cookie I have ever tasted! Sometimes people
think I left out an ingredient because there is no flour!

Ingredients:
1 cup crunchy or smooth peanut butter
1 cup brown sugar
1 egg
1 teaspoon vanilla flavouring

Method:
Preheat oven to 375 degrees F.
Cream the sugar with the peanut butter. Add egg and vanilla and mix well.
Drop by teaspoonfuls on ungreased cookie sheet.
Flatten with a fork criss-cross. Bake for 6 - 7 minutes in preheated 375 degree oven. Do not
overbake. Watch closely. They will still be a little soft on top, but will harden after you remove
from the cookie sheet.
If you remove too soon, just put back in for a few seconds.

Store in an airtight container!
