Ingredients

1 cup all purpose flour
1 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. salt (necessary)
1/2 cup vegetable shortening
1 cup chunky peanut butter
3/4 cup sugar
2 large eggs
3 large ripe bananas, mashed
1 tsp. fresh lemon juice
1 tsp. vanilla extract



Instructions

Preheat oven to temperature 350°F. Butter and flour a 9x5 inch loaf pan. Sift together first 4 ingredients in a bowl. Combine next 3 ingredients in another bowl and beat with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Stir in flour mixture until just combined. Combine bananas with lemon juice and vanilla and fold into batter. Transfer batter to loaf pan and bake in the middle of oven 1 hour and 10 minutes, or until a tester comes out clean. Cool bread in pan on a rack 10 minutes and invert onto rack to cool completely.
