I use this for everything, for baking cookies to using it underneath bacon in microwave....it is really handy.

The toaster oven is my favorite appliance.  I do SO MUCH cooking in that thing.  I hate to heat the house unnecessarily with the big ovens.

These sound so good but I am allergic to white potatoes so I am going to try this one out with sweet potatoes. Thanks for the parchment idea too cuz I have it but never seem to find uses for it.

 girls22.gif  A special treat when you get tired of just plain potatoes!!  Yummy!!!

POTATO BUMPS (lightly spiced)

6 unpeeled medium sized Potatoes.
(Red potatoes hold their form best).
1 Tbsp Olive Oil.

SPICE INGREDIENTS:
1/4 tsp Parsley Flakes
3/4 tsp Salt
1/4 tsp Chili Powder
1/4 tsp Paprika
1/8 tsp Thyme
1/4 tsp Garlic Powder
1/4 (or more) tsp Onion Powder
1/8 tsp Cayenne
1/8 tsp Rosemary

METHOD:
Wash then cut each potato in quarters lengthwise. Cut each quarter crosswise into 3 pieces.

In a large bowl, toss potatoes with olive oil.

Combine spice ingredients in small cup.
Sprinkle over potatoes.
Toss to coat.

Spread on large greased baking sheet with sides.
(I use parchment paper, my pan stays clean & they don't burn).

Bake uncovered in center of 425 oven. Cook for about 45 minutes, stirring twice, until browned and tender. Serves 6.

tumbsup.gif  With 5 or more leftover cooked potatoes (skins on or off) you can come up with another delicious potato variation.  Follow above recipe (replacing raw potatoes with cooked) and set oven at 425 for first 15 minutes.  Then finish them at 450 for approx 15 - 20 min more or until crispy.  Keep checking for doneness after 20 minutes.  Lovely!!
