went apple picking tons off apples anyone got some good ones other than apples pie or baked apples???

Here is one I posted a few weeks ago ,


Baked Apples with Carmel Sauce

24 dried apricot halves, chopped
4 tsp. packed dark brown sugar
1 tsp. vanilla extract
4 small Granny Smith apples, cored
1/2 c. evaporated milk
4 tsp. packed brown sugar
1tsp. cornstarch
pinch of salt
1/2 tsp. vanilla extract

Preheat oven to 350. In a small bowl, combine the apricots, brown sugar, and vanilla. Pack into the apple cavities, then wrap each in apple in foil. Bake until soft, 40-45 minutes. Meanwhile , to prepare the carmel sauce, in a small saucepan over medium heat, combine 1/4 cup of the milk, the brown surgar, cornstarch, and salt, stirring until smooth, then stirring in the remaining milk; bring just to a boil, stirring constantly. Reduce the heat and cook 1 minute longer. Remove from heat and stir in the vanilla. Serve the apples, drizzle with caramal sauce.

Apple Crisp

Serves: 8

Ingredients:
5  Apples, sliced and peeled
1 c Brown Sugar
3/4 c Quaker Oats
3/4 c Flour
1 ts Cinnamon
1 ts Nutmeg
1  Stick Butter, softened
1/4 c Apple Juice, or water

Instructions:
Preheat oven to 375 deg F.
Put half of the apples in a greased 9"x9" pan.
Blend together remaining ingredients, except juice,
and crumble half the flour mixture over the apples.

Cover with remaining apples and flour mixture.
Pour juice over top.
Bake 35 minutes.
Great with vanilla ice cream.

Apple Bars

Ingredients

    * 2 c all-purpose flour
    * 1/2 c sugar
    * 1/2 tsp baking powder
    * 1/2 tsp salt
    * 1 c butter or margarine
    * 2 egg yolks -- beaten
    * 4 med apples, pared, cored and sliced -- (4 c)
    * 3/4 c sugar
    * 1/4 c all-purpose flour
    * 1 tsp ground cinnamon
    * 1 egg white-- slightly beaten

Directions

   1. Combine the 2 c flour, the 1/2 c sugar, the baking powder, and salt; Cut in butter till crumbs are the size of small peas.
   2. Stir in egg yolks.
   3. Divide mixture in 1/2.
   4. Press 1 1/2 over bottom of 15x10x1" Baking pan.
   5. Combine apples, remaining sugar and flour and cinnamon.
   6. Arrange over bottom crust.
   7. Crumble remaining dough over apples.
   8. Brush egg white over all.
   9. Bake @ 350°F for 40 min.
  10. Cool.
  11. Drizzle with thin powdered sugar icing if desired.
  12. Cut in bars.

Comments
The cookies can also be baked in a 13x9x2" Baking pan for 40-45 min. Makes 4 dozen bars.

Apple Betty

Ingredients

    * 4 cups apple
    * 1/4 cup orange juice
    * 1 cup sugar
    * 3/4 cup sifted flour
    * 1/2 tsp cinnamon
    * 1/4 tsp nutmeg (i don't really use this)
    * Dash salt (nor this 1)
    * 1/2 cupbutter

Directions

   1. Preheat oven to 375°F.
   2. Butter pan.
   3. Sprinkle apples with orange juice after slicing and placing in pan.
   4. Combine flour, sugar, spices & Salt.
   5. Cut in butter until Mixture turns crumbly.
   6. Sprinkle over apples.
   7. Bake for 45 minutes or until apples are tender and topping is crisp.

Apple Cake

Directions

   1. Preheat oven to 300°F.
   2. Grease 9x13" Baking pan.

Ingredients

    * 2 eggs
    * 2 cups brown sugar
    * 1 cup cooking oil
    * 1 teaspoon vanilla
    * 1 teaspoon cinnamon
    * 1 teaspoon baking soda
    * 2 cups flour
    * 3 cups un-peeled apples cut in small pieces
    * 1 cup coarsely chopped nuts

   1. In a large mixing bowl combine eggs, sugar, oil and vanilla.
   2. Mix well.
   3. Measure flour into a small bowl and mix in cinnamon and baking soda.
   4. Dump dry ingredients into egg, sugar, oil mixture and mix until Well blended.
   5. Stir in apples and nuts and pour into greased 9x13" Pan.
   6. Bake at 300°F for 1 hour.
   7. Serve warm or cold, excellent with real whipped cream.

Apple Cream Cheese Muffins

Ingredients

    * 1 package (3 oz) cream cheese softened
    * 3/4 cup sugar
    * 2 eggs
    * 1/2 cup milk
    * 1/4 cup butter or margarine, melted
    * 1 Tablespoon Lemon juice
    * 1 tsp vanilla extract
    * 1-1/2 cups all purpose flour
    * 1-1/2 tsp baking powder
    * 1/2 tsp baking soda
    * 1/2 tsp salt
    * 1 cup peeled diced tart apple
    * 1/2 c branflakes

Topping

    * 1-1/2 tsp sugar
    * 1 tsp cinnamon

Directions

   1. Combine cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla.
   2. Beat till smooth.
   3. Combine flour, baking powder, baking soda and salt; Stir into cream cheese mixture just until moistened.
   4. Fold in apples and bran flakes.
   5. Fill muffin cups and sprinkle tops with sugar and cinnamon mixture.
   6. Bake at 375°F for 20-25 min.

Apple Pancakes

Ingredients

    * 6 tbsps butter
    * 4 medium apples peeled, cored & Sliced
    * 1/3 cup packed light brown sugar
    * 1-1/2 tsps ground cinnamon
    * Juice of 1 lemon
    * 6 large eggs
    * 1-1/2 cups whole milk
    * 1-1/2 cups unbleached all-purpose flour
    * 1 tsp vanilla extract
    * 1/4 tsp salt

Directions

   1. Preheat oven to 425°F.
   2. In a large skillet, melt butter and saute the apple slices for about 2 minutes, just until tender, but still firm.
   3. Sprinkle with brown sugar, cinnamon & Lemon juice.
   4. Stir to combine.
   5. Place a 12" Round or 9x13" Rectangle baking dish in the oven to heat for 2 minutes.
   6. Remove dish and scrape the sauteed fruit into it.
   7. If the Skillet is ovenproof the fruit may be distributed evenly over the bottom.
   8. In a large Bowl using a whisk, combine the eggs, milk, flour, vanilla and salt & Beat until well Blended and smooth, about 1 minute.
   9. Pour the batter over the hot fruit.
  10. Place the Pancake immediately in the oven and bake for 20 minutes, or until puffed and brown.
  11. Let stand 5 minutes before cutting into wedges.
  12. Serve immediately.

i need something that will be fast easy and will feed 45 to 50  people
for next staurday

whoa ive never fed more than 2 so i am the WRONGGGG person to ask!! LOL can someone else help with that question??

Waldorf Salad

6 lbs. eating apples (4 qts.)
1/2 c. lemon juice
2 lbs. celery, diced (2 qts.)
6 heads lettuce
1 pt. fruit salad dressing
2 c. whipping cream
2 c. nuts (chopped)
Raisins are optional

Wash but do not peel apples. Dice in ½ inch pieces and marinate in lemon juice. Cut celery in 1/3 inch pieces. Whip cream and fold into dressing. Mix apples and celery with half the dressing mix just before serving. Place dipper of salad
on lettuce leaf and garnish with teaspoon of dressing. Sprinkle chopped nuts over top of each salad. Yields 50 portions (about 1/3 cup per serving).
